Gazpacho


INGREDIENTS

  • 1 Tbsp. Wakaya Perfection Organic Fijian
  • Turmeric Powder
  • 1 1⁄2 tsp. Wakaya Perfection Fijian Kosher Sea Salt
  • 10 ripe yellow tomatoes, cored, seeded, peeled and chopped in large dice
  • 1 clove garlic
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 1 European cucumber, seeded, peeled and diced
  • 1 red onion, diced
  • 2⁄3 cup day-old baguette, diced
  • 1⁄3 cup extra virgin olive oil 3 Tbsp. sherry vinegar

DIRECTIONS

  1. Place chopped tomatoes, garlic, half the peppers and cucumbers, onions and bread in food processor.
  2. Pulse until mixture has uniform chunky texture, then add half of the olive oil and adjust seasonings with salt.
  3. Add reserved peppers and cucumbers and garnish with sherry vinegar and remaining olive oil.
