Organic Ginger Turtle Cookie

Organic Gingerbread Turtle

INGREDIENTS:
  • 1-1/2 cups all-purpose flour
  • 2 tsp. Wakaya Perfection Organic Ginger Powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1 stick unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 egg yolk
  • 1/2 tsp. vanilla
  • 1-1/4 cup raw sugar for dusting on top of cookies

DIRECTIONS:

  1. Preheat oven to 350° F.
  2. Sift together flour, ginger powder, cinnamon, baking soda, cloves, nutmeg and salt in a large bowl.
  3. Whip butter by hand or with mixer until smooth. Whip in brown sugar, followed by molasses, egg yolk and vanilla. Add in flour mixture and blend well.
  4. Wrap dough in wax paper and chill for 2 hours.
  5. Roll out dough on floured surface; cut out shapes with cookie cutter of your choice and dust with raw sugar.
  6. Place dough cutouts on cookie sheet lined with parchment paper.
  7. Bake 10-12 minutes then cool on wire rack.
